I'm going to be visiting Denver/Northern Colorado next week for the first time since like 2007, and I was wondering if anyone could steer me toward which casino or casinos I should visit?

Pai Gow is very limited in Black Hawk/Central City. The only places that have it are the Isle (Emperor's Challenge) and the Lodge (Fortune Progressive). Your Ameristar card level carries over to Black Hawk, so if you are a Premier card holder in KC, you'll be Premier in Colorado as well. Ameristar has the most hotel rooms and I believe the most table games at 30. Casinos run the gamut--there's also a handful of casinos that have eight or less. In the spirit of full disclosure, that's where I work...so that's where I'd like you to play. :) The 'big three' casinos in Black Hawk (Ameristar, Lodge, Isle) have 3-4-5x odds on craps. The Gilpin (small joint in 'downtown' Black Hawk) offers up to 50x odds during the week. ($2 line bet).
Also keep in mind in Colorado that alcoholic beverages are free, but you're pretty much limited to 2-3 per hour, unless you know how to 'game' the system. Dealers in almost all casinos keep their own tips, which means you'll only get 30 minutes with a specific dealer on a given table; then they rotate. It doesn't make a bit of difference in how the cards come out, but Colorado has the most players that deviate from basic strategy than any other market that I've worked or played in. (KC, Vegas, St. Louis, Sioux Falls, Twin Cities) (A vestige of when bets were a $5 max by law) I know you didn't mention it, but if you have any friends or associates with you, no limit poker games are not offered, due to gaming regulations capping the maximum bet at $100.

Youre not truly limited, but if you stay at one spot (hanging out at a table) the waitresses will only come around a couple times an hour. However, there are ways around that, if you move around the floor haha
Well, yes, absolutely. That's why I said you have to 'game' the system...but I probably shouldn't tell people exactly how to do that.Also, there is a bar on the upstairs at Ameristar that is only open on the weekends I believe but it is usually dead. The bartender there is very liberal if given incentive as he gets very bored.
The good thing about 'our' casinos is NO SMOKING!
That is amazing for us nonsmokers.
The Table limits as I recall on BJ were only $10 on a shoe game. There was a pseudo progressive side bet called streak where if you win a streak of 3-4-5 or so hands in a row, betting the bonus, you could win some progressively better odds that I saw a couple people play.
Also of note that at the Craps table, the dealer mentioned to me that they allow 5x odds on all the numbers 4-5-6-8-9-10. This was early in the day on a Thursday so they may have different rules on the weekend. I walked around the little burg but only played at Ameristar so I can't speak to other casinos if they are doing the same.
It was early in the day so I didn't notice the slow drink service, but if you are thirsty for non-alcoholic drinks since it is rather dry in Denver, then there are several self service drink station areas throughout the casino floor at Ameristar. Very convenient if all you want is a soda or even coffee/tea service. Plus it's free, just serve yourself much like a fast food place. I wish more casinos offered free beverage stations if all you want/need is a water or soda.
And not being a smoker, it's a nice place to gamble and not leave with your clothes smelling of smoke.

Introduction
I first saw Blackjack Burnout at the 2016 Cutting Edge Table Games show in Las Vegas, where I made this interview of the inventor, Angel Espino. In August, 2017, it had its first placement at the Saratoga casino in Blackhawk, Colorado. Since then, it was also picked up by the Golden Gates casino in Blackhawk.
The game plays like regular blackjack except the player gets one opportunity to replace a bad card for the next one in the deck. For this option, the player must add a non-refundable 20% fee at the start of the hand.
Rules
- Blackjack Burnout is an optional feature in addition to conventional blackjack.
- The player may play blackjack normally or may enable the Burnout feature by placing a fee equal to 20% of his initial bet in the area on the table for the Burnout Option.
- If the player enabled the Burnout Option, then at any one time after hitting or doubling on the initial hand he may replace the last card card with the next card in the deck. This option includes after busting. If the player invokes the Burnout Option, then the dealer will take the last card and replace the unwanted card with the next one in the deck.
- Splitting invalidates the Burnout Option.
- The Burnout Option fee is non-refundable. The player does not get it back if he doesn't invoke it.
- Otherwise, all usual blackjack rules apply. The rules suggested by the game maker are:
- Six decks
- Dealer hits soft 17
- Double after split allowed
- Pairs may be re-split to four hands, except aces, which may be split once only.
- No surrender
In addition, casinos may choose to add a set of side bets called the Bonus Bets. These are basically parlay bets that win if the player wins the required number of hands in a row. They pay as follows according to the number of consecutive hands needed to win:
- 2 consecutive wins: 2 to 1
- 3 consecutive wins: 4 to 1
- 4 consecutive wins: 8 to 1
- 5 consecutive wins: 15 to 1
- 6 consecutive wins: 28 to 1
- 7 consecutive wins: 50 to 1
- 8 consecutive wins: 90 to 1
For purposes of establishing whether a hand won or lost, the net overall win is used in the case of splitting. In the event of any net push, then that hand is ignored as if it never happened for purposes of the Bonus Bets.
Strategy
Following is the basic strategy if the Burnout Option is still available. If it isn't available, then the player should use conventional blackjack basic strategy.
The strategy for using the Burnout Option depends on the player's hand before the last card, the hand including the last card, and the dealer's up card. The following images were taken from the math report by Charles Mousseau on when to invoke the option.

In addition, there are strategy deviations if Bonus Bets are involved.
Analysis
All things considered, the house edge of Blackjack Burnout is 1.71% of the original wager only or 1.43% relative to the 1.2 units bet.
Following is the combined house edge between the base game and Bonus bets, assuming optimal player strategy to maximize the overall return.
- 2 consecutive wins: 6.55%
- 3 consecutive wins: 13.07%
- 4 consecutive wins: 12.66%
- 5 consecutive wins: 13.34%
- 6 consecutive wins: 12.34%
- 7 consecutive wins: 13.95%
- 8 consecutive wins: 14.31%
